does anyone know if i can buy a ticket to chiang mai at the airport when i arrive from the uk

I assume you are talking about arriving to Bangkok Suvarnabhumi airport.
Yes, you can buy a ticket to Chiang Mai at the airport. AirAsia has a ticket counter there. If you are thinking of flying with Nok Air or One-Two-Go, you'd need to transfer to Don Muang airport and buy a ticket there.
You should have no problem buying a ticket for the same day flight (except during Songkran holiday season Apr 8th to 21st.)
